Crispy Strawberry Waffles for One

Ingredients

  • 1 cup freeze dried strawberries to be crushed
  • ¾ cup of all purpose flour
  • ¼ cup corn starch
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1 large egg separated
  • ½ cup strawberry flavored Kefir or other yogurt drink
  • ½ cup whole milk
  • 2 tablespoons butter melted then cooled
  • 2 teaspoon vanilla extract

Instructions

  • Preheat your waffle iron to the highest setting.
  • Pour the freeze dried strawberries into a small ziploc bag and crush them with a rolling pin, or alternatively if you have a spice grinder, you can pulverize them in there.
  • In a medium sized bowl combine the crushed strawberries, flour, corn starch, sugar, baking powder and salt.
  • Separate the egg and set the yolk aside, you’ll need it in a minute. Whisk the egg white in a small bowl for a couple seconds, no need to go crazy just whip till its a little frothy.
  • Add in the yolk, strawberry kefir, milk, melted butter, and vanilla extract.
  • Whisk the wet ingredients, then add them into the dry ingredients.
  • Whisk only until the ingredients are combined, making sure not to overmix. The batter will be lumpy.
  • When the waffle iron is ready, spray it with baking spray or Pam.
  • Ladle the batter into the waffle iron, using a ¼ cup measuring cup- about 3 scoops per waffle, and cook until golden and crispy.
  • Cool on a wire cooling rack, and eat immediately.  

Notes

To ensure the waffles are crispy make sure:
  • the waffle iron is on the highest setting
  • you whisk the egg white slightly till frothy- you can for sure skip this step and just add in the egg but it might alter the crisp factor.
