½cupstrawberry flavored Kefir or other yogurt drink
½cupwhole milk
2tablespoonsbutter, melted then cooled
2teaspoonvanilla extract
Instructions
Preheat your waffle iron to the highest setting.
Pour the freeze dried strawberries into a small ziploc bag and crush them with a rolling pin, or alternatively if you have a spice grinder, you can pulverize them in there.
In a medium sized bowl combine the crushed strawberries, flour, corn starch, sugar, baking powder and salt.
Separate the egg and set the yolk aside, you’ll need it in a minute. Whisk the egg white in a small bowl for a couple seconds, no need to go crazy just whip till its a little frothy.
Add in the yolk, strawberry kefir, milk, melted butter, and vanilla extract.
Whisk the wet ingredients, then add them into the dry ingredients.
Whisk only until the ingredients are combined, making sure not to overmix. The batter will be lumpy.
When the waffle iron is ready, spray it with baking spray or Pam.
Ladle the batter into the waffle iron, using a ¼ cup measuring cup- about 3 scoops per waffle, and cook until golden and crispy.
Cool on a wire cooling rack, and eat immediately.
Notes
To ensure the waffles are crispy make sure:
the waffle iron is on the highest setting
you whisk the egg white slightly till frothy- you can for sure skip this step and just add in the egg but it might alter the crisp factor.
