Gooey One Bowl Blondie Cookies

These blondie cookies are so easy to make in one bowl and are ready in less than and hour. They are super gooey on the inside and have crispy and shiny crackled tops. They also have a sweet vanilla taste and almost caramel like flavor, and are perfect to bring to potlucks or barbecues!

Ingredients

  • 1 cup unsalted butter, melted
  • 1 ½ cups granulated sugar
  • 2 eggs, large, at room temperature
  • 1 tablespoon vanilla extract
  • 2 cups all purpose flour
  • ½ tsp baking powder
  • Pinch kosher salt
  • 1 bag chocolate chips, 10-12 oz or other toppings!

Instructions
 

  • Preheat the oven to 350° F. Spray an 8x8 pan with baking spray or line with parchment paper. 
  • Melted butter, sugar, and eggs mixed in a glass bowl.
    In a large microwavable bowl melt the 1 cup butter, then cool for 2 minutes. Add the 1 1/2 cups sugar, 2 eggs, and 1 tbsp vanilla, and whisk until frothy and combined well. About 1 minute.
  • Blondie batter in a glass bowl.
    Add in the 2 cups flour, 1/2 tsp baking powder, and pinch of salt and mix with a spatula or wooden spoon until the batter is thick and smooth.
  • Blondie batter with chocolate chips in a glass bowl.
    Add the chocolate chips and stir to combine.
  • Blondie batter in a metal pan.
    Pour the batter into the prepared pan and bake for 35-40 minutes.

Notes

For an 8x8 pan: Bake for 35 minutes for chewy cookies. Bake up to 45 minutes for more cakey blondies.
For 9x13 pan: Bake for 25 minutes for chewy and up to 35 minutes for more cakey.
