These homemade coffee cake muffins with cinnamon streusel topping are tasty & easy to make! Perfect for breakfast or brunch.

Coffee Cake Muffin Ingredients

In a bowl, combine crumb topping ingredients (flour, brown sugar, white sugar, cinnamon & salt). Cut in butter & chill in fridge.


In another bowl, combine flour, brown sugar, baking powder, baking soda, cinnamon & salt.


In a separate bowl, whisk eggs and oil. Mix in buttermilk and vanilla extract. Combine with dry mixture & let rest 10 mins.


Line a muffin tin with muffin liners. Fill each liner 3/4 of the way full with batter. Sprinkle with crumb topping.


Bake at 425 for 8 minutes, then lower to 350 for 12-14 minutes. Let cool.
