Mini Baked Cheesecake Bites

These creamy mini cheesecakes with graham cracker crust are easy to make and can be topped with berries, caramel & more!

Mini Cheesecake Ingredients

Combine melted butter, graham cracker crumbs, and granulated sugar.


Press into a lined 48-cup mini cupcake pan. Bake 5 mins until golden brown.


Beat cream cheese and sugar until smooth. Mix in sour cream, flour & vanilla extract. Mix in egg.


Use a tablespoon to pour batter into each cupcake liner (over pre-baked crust). Bake until set.


Chill in the refrigerator for at least 2 hours. Top with fresh berries, caramel, or your favorite toppings!
