These easy homemade coconut cupcakes are topped with coconut buttercream frosting. The perfect summer cupcake recipe!

Coconut Cupcake Ingredients

Mix dry ingredients in a bowl. In a separate bowl, cream butter & sugar. Mix in egg, egg whites & vanilla extract.

Add 1/3 dry ingredients to wet mixture, then 1/2 of the coconut milk, alternating until it's all mixed in.

Stir in shredded coconut. Scoop batter into muffin tin, filling 3/4 of the way full.

Bake until fluffy & let cool.

Mix together coconut buttercream frosting ingredients until smooth & fluffy.

Use a piping bag to frost cupcakes & enjoy!
