Pineapple Cupcakes

These 30-min homemade pineapple cupcakes are moist & topped with pineapple frosting. A fun tropical cupcake recipe!

Pineapple Cupcake Ingredients

-granulated sugar -all-purpose flour -baking powder -baking soda -kosher salt -crushed pineapple (with juice) -vanilla extract -vegetable oil -large egg

In a large mixing bowl, combine sugar, flour, baking powder, baking soda & salt. Whisk lightly.


Add crushed pineapple with juice, vanilla extract, vegetable oil & egg. Mix until just combined.


Pour/scoop batter into muffin tins 2/3 of the way full. Bake 18 mins, until centers are springy. Let cool.


Mix together pineapple frosting ingredients until smooth & fluffy.


Use a piping bag to frost cupcakes & enjoy!
