These homemade lemon cupcakes are made in one bowl & topped with lemon buttercream frosting. The perfect summer cupcake recipe!

Lemon Cupcake Ingredients

In a hand or stand mixer, combine sugar, flour, lemon zest, baking powder, baking soda & salt.

Add butter & mix until the mixture looks sandy.

Mix in lemon juice & buttermilk. Then, mix in egg & egg whites.

Scoop batter into muffin tin, filling 3/4 of the way full. Bake until fluffy & let cool.

Mix together lemon buttercream frosting ingredients until smooth & fluffy.
