Lemon Curd Cookies

These lemon shortbread cookies with lemon curd & meringue are a perfect cookie recipe for spring & summer!

Lemon Curd & Meringue Ingredients

Cream butter & confectioners' sugar with a mixer. Mix in vanilla extract, flour & salt.


Shape dough into a disc. Wrap in plastic wrap & chill in fridge for 1 hour.


Heat egg yolks, sugar, lemon zest & lemon juice in a saucepan until thickened. Remove from heat & stir in butter. Chill in fridge.


Roll dough into 1/2" thickness. Cut out shapes. Place on a lined baking sheet & bake until firm.


Using a mixer, whip egg whites & cream of tartar. Slowly pour in sugar & whip until it forms stiff peaks.


Assemble cookies: dollop lemon curd on baked cookies. Pipe or spoon meringue, then torch on top.
