Pineapple Upside Down Cupcakes

These homemade pineapple upside down cupcakes are a perfect mini dessert for parties! Easy and fun to make.

Pineapple Cupcake Ingredients

Melt butter & brown sugar in a pot over low-medium heat. Pour 1 Tbsp of mixture into greased cupcake wells.


Drain canned pineapple & pat dry. Place pineapple & cherries in each cupcake well.


Whisk sugar, flour, baking powder, baking soda & salt in a large bowl.


Mix in pineapple juice, vegetable oil, egg & vanilla extract until smooth.


Fill cupcake wells 2/3 of the way full. Bake until fluffy. Let cool 10 minutes.


Run a knife around the edges of each cupcake, then remove them & flip them over.
