This easy mini muffin recipe with bananas is a fun & tasy breakfast! It's also a perfect use for ripe bananas. Just 25 minutes!

Mini Banana Muffin Ingredients

Melt butter & let cool slightly. Mix in mashed bananas, egg, vanilla, yogurt & milk until combined.


In a separate bowl, whisk together dry ingredients (flour, brown sugar, baking soda, baking powder & salt).


Add dry mixture to wet mixture. Stir until just combined. Fold in chocolate chips (optional).


Line a mini muffin tin with mini muffin liners. Fill each liner 3/4 of the way full with batter.


Bake at 425 for 3 minutes, then lower to 350 for 8 minutes. Let cool.
