These homemade lemon cupcakes are topped with an easy strawberry buttercream frosting. A perfect spring dessert recipe!

Lemon Cupcake Ingredients

Cream butter & sugar in stand mixer. Add lemon juice, zest & extract.

Add egg & egg whites. Mix until combined.

Whisk dry ingredients in a bowl. Slowly mix dry ingredients & buttermilk into creamed ingredients (alternating).

Fill cupcake liners 3/4 of the way full. Bake until fluffy. Let cool completely.

Meanwhile, cream butter, sugar & strawberry jam to make buttercream frosting.

Use a piping bag to frost cupcakes.
