Blueberry Lemon Cupcakes

These homemade lemon blueberry cupcakes are easy to make & topped with cream cheese frosting. The perfect spring cupcake recipe!

Blueberry Cupcake Ingredients

In a hand or stand mixer, combine butter, sugar & lemon zest. Cream until fluffy, then mix in oil & eggs.


Separately, combine dry ingredients. In a measuring cup, mix buttermilk, lemon juice & lemon extract.


Alternate adding 1/3 of the dry ingredients and 1/3 of the wet ingredients until all mixed in. Fold in flour-dusted blueberries.


Scoop batter into muffin tin, filling 3/4 of the way full. Bake until fluffy & let cool.


Mix together cream cheese frosting ingredients until smooth & fluffy.


Use a piping bag to frost cupcakes & enjoy!
