This homemade lemon cake recipe with lemon curd is fluffy, moist, and delicious! A perfect layer cake for spring & summer.

Combine dry ingredients (including sugar) in a large bowl or stand mixer.

Cream in butter. Mix in lemon juice & buttermilk, then eggs & egg white.

Evenly divide batter between cake pans & bake until set. Let cool completely on a wire rack.

Combine egg yolks, lemon juice, lemon zest & sugar. Cook slowly over low-medium heat, stirring, until thickened.

Remove from heat & stir in diced cold butter until melted. Strain, cover & chill in the fridge for 1 hour.

Mix together lemon buttercream ingredients until fluffy (or, make meringue if desired).

Assemble cake, piping frosting and filling with lemon curd between layers (to create a "dam").

Frost & optionally decorate with mini meringues.
