This decadent chocolate cake combines a layer of airy chocolate mousse with chocolate fudge cake. Delish with berries!

Chocolate Mousse Cake Ingredients

Melt chocolate and butter in a bowl. Mix in sugar, eggs & vanilla extract. Then, add flour, cocoa powder & salt.

Pour batter into cake pan & bake 25-28 minutes (until set). Let cool.

Melt more butter & chocolate in the microwave. Let cool. Mix instant coffee & water and stir in. Add egg yolks.

Whip egg whites while pouring in sugar until stiff peaks form.

Slowly fold whipped egg whites into chocolate mixture until combined.

Whip heavy cream & cream of tartar until stiff peaks form. Fold into mousse mixture.

Line baked cake layer w/ acetate, then pour mousse into springform pan. Chill 4 hours or overnight.

Add fresh berries or fruit on top, then slice and enjoy!
