Fresh-Baked Apple Cobbler Recipe

 With a blend of cinnamon, citrus zest, and a golden biscuit topping, this easy recipe for Fresh-Baked Apple Cobbler perfectly balances the tart and sweet flavors of Honeycrisp apples in a simple dessert for Fall. Enjoy on a cozy afternoon or as a sweet part of brunch!

Ingredients

  • 5 Honeycrisp apples, peeled cored, and cut into wedges
  • 1/2 cup brown sugar
  • 1 large lemon, juiced
  • 3 tbsp flour
  • 1 tbsp cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 tsp kosher salt

For the biscuit topping

  • 1 ¾ cup all purpose flour, 219 g
  • cup white sugar, 67g
  • 1 ¼ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp kosher salt
  • ½ tsp cinnamon
  • ½ cup unsalted butter, cold, diced small
  • cup buttermilk

Instructions
 

  • Preheat the oven to 350° F and spray an 8x8 baking dish with baking spray.
  • Prepare the apple cobbler filling. In a large bowl combine the apples with ½ cup brown sugar, the juice of 1 lemon, 3 tbsp flour, 1 tbsp cornstarch, 1 tsp cinnamon, and ¼ tsp kosher salt. Mix well with your hands to combine.
  • Pour the apples into the baking dish.
  • In a medium size bowl combine the 1 ¾ cup flour, ⅓ cup sugar, 1 ¼ tsp baking powder, ¼ tsp baking soda, ½ tsp kosher salt and ½ tsp cinnamon. Mix to combine.
  • Using a pastry cutter or your fingers, cut in the butter. This means to combine the flour mixture with the butter. Use your fingers to pinch the butter into the flour mixture until small clumps form, no larger than the size of a pea.
  • Next pour in the buttermilk. Mix with a wooden spoon or spatula until a thick batter is formed.
  • Dollop and spread the biscuit mixture over the apples. Wet hands help here!
  • Bake the cobbler for 45-50 minutes or until the topping is golden brown. Serve warm!

Notes

You can double the recipe for a 9 x 13 pan.
