5Honeycrisp apples, peeled cored, and cut into wedges
1/2cupbrown sugar
1large lemon, juiced
3tbspflour
1tbspcornstarch
1teaspoonground cinnamon
1/4tspkosher salt
For the biscuit topping
1 ¾cupall purpose flour, 219 g
⅓cupwhite sugar, 67g
1 ¼tspbaking powder
¼tspbaking soda
½tspkosher salt
½tspcinnamon
½cupunsalted butter, cold, diced small
⅔cupbuttermilk
Instructions
Preheat the oven to 350° F and spray an 8x8 baking dish with baking spray.
Prepare the apple cobbler filling. In a large bowl combine the apples with ½ cup brown sugar, the juice of 1 lemon, 3 tbsp flour, 1 tbsp cornstarch, 1 tsp cinnamon, and ¼ tsp kosher salt. Mix well with your hands to combine.
Pour the apples into the baking dish.
In a medium size bowl combine the 1 ¾ cup flour, ⅓ cup sugar, 1 ¼ tsp baking powder, ¼ tsp baking soda, ½ tsp kosher salt and ½ tsp cinnamon. Mix to combine.
Using a pastry cutter or your fingers, cut in the butter. This means to combine the flour mixture with the butter. Use your fingers to pinch the butter into the flour mixture until small clumps form, no larger than the size of a pea.
Next pour in the buttermilk. Mix with a wooden spoon or spatula until a thick batter is formed.
Dollop and spread the biscuit mixture over the apples. Wet hands help here!
Bake the cobbler for 45-50 minutes or until the topping is golden brown. Serve warm!
