Summer Summer Summertime. It’s almost here!

When it comes to summer, all I can think about is good food, good friends, and good fun. I’m thinking about sitting by the pool with a delicious drink in my hand and music playing in the background.

If you watch my Insta stories, then you know what kind of music I’m talking about. That means you have also seen my horrific dancing and I’m sorry about that, but that’s what 90’s music does to me and I can’t, won’t, and don’t want to stop.

Speaking of 90’s music- should we talk about the 90’s cover band concert that I went to a few Saturday nights ago? AKA the best night of my life. I mean seriously, that day started off kinda not so great until I saw one of my friends who said, “Hey, we’re going out tonight to some 90’s thing. Do you want to come?” YUP, you bet I did. That night, we walked into the venue with the band dressed up in their neon clothes and crop tops. They covered all the 90’s hit songs. Then they stopped for a short break, and in true 90’s form, one guy passed his bandmate a Zima®. It was like taking a step back in time, and I never wanted to come back.

If you’re not familiar with Zima®,it was the alcoholic drink of choice of the 90’s. It’s light, refreshing, and seen as an alternative to beer, more like a wine cooler. A lot of people loved it and were upset when it was discontinued, but I have some awesome news for you guys because- IT’S BACK!

Yes, this delicious bubbly drink is back, but only for a short time, which means you better prep yourself for Z2K because the end is near! Get in all the Zima® goodness any way while you still can. The fun thing about Zima® is that it’s clear, so it’s perfect for mixing into cocktails, or even just drinking on its own.

In honor of summer coming up and Zima® back in stores, I came up with this super easy frozen peach and mint cocktail. It’s the perfect drink to have in your hand in that summer dream I mentioned above, takes only a couple of ingredients, and is ready in seconds with the help of your blender.

The sweet citrus flavor of Zima® blended with the classic flavor combination of peach and mint will be sure to keep you cool all summer long. So grab your girlfriends, break out the blender- and maybe some 90’s music- and get to it because I’m telling you this drink is allllllll that.

Ingredients

  • 2 12 oz. bottles Zima®
  • 1 1 lb bag frozen peaches
  • ⅓ cup fresh mint chopped and loosely packed
  • 3 tablespoons honey
  • 3 cups ice
  • Mint leaves for garnish optional
  • Fresh peaches for garnish optional

Instructions

  • Place all ingredients in a blender starting with the Zima®.
  • Pulse on low until the frozen peaches and ice have been crushed and the consistency of the drink is like a slushy.
  • Pour into glasses and top with sliced peaches and mint for garnish.
  • Enjoy!

Cook time: 1 min
Yield: 40 donut fries
2 pack Baker’s Corner Active Dry Yeast
1 1/2 cup warm water
1/3 cup Sugar
2 Simply Nature Grade A Organic Cage Free Brown Eggs
2 tbsp Stonemill Pure Vanilla Extract
1/3 cup Carlini Pure Vegetable Oil
5-6 cups Baker’s Corner All Purpose Flour
1 tsp Kosher salt
½ cup Baker’s Corner Powdered Sugar
For Dipping:
1 cup Baker’s Corner Dark or Milk Chocolate Morsels
Simply Nature Organic Raspberry Preserves
Method:
•Mix the yeast with water in a mixer bowl and let stand for 10 mins until frothy. Add the
sugar, eggs, vanilla, and oil to the bowl and mix until well combined.
•Start adding only 5 cups of flour and salt, and knead/mix on medium speed in a stand mixer
fitted with the dough attachment for 5 minutes until a soft, non-sticky dough forms. If the
dough seems sticky, add ¼ cup flour to the dough until it no longer sticks to the bowl when
mixing.
•Let the dough rest in the bowl for an hour to double in size. 
•Punch down the dough and remove it from the bowl onto a lightly floured surface. Using a
lightly floured rolling pin, roll it out into a rectangle. About 18”x 15” and 1/2 of an inch in
thickness. 
•Using a pizza cutter, cut in half vertically. Then slice thin strips horizontally. You want them
thin as they will puff up while frying.
•Let the fries rest for another 15 mins. 
•Meanwhile, using a deep fryer or a large pot, heat your oil to 350 degrees F. Fry the donut
fries 30 seconds per side, then drain on a paper towel.
•Dust the donut fries with powdered sugar and set aside.
•Microwave 1 cup of dark or milk chocolate for 30 seconds at a time until melted. Scoop
jelly into another bowl. Dip the fries in the chocolate or jelly!
