This frosting is fun and festive, you’ll want to make it over and over again.

Get ready to party with this Baileys frosting! When I was making the recipe for this Guinness chocolate cake, I wasnt sure if I should top it with a chocolate cream cheese frosting, or make a new boozy recipe to fill and frost it.

Ladies and gentlemen, I decided to go for the booze. Your’e welcome. It takes literally just 5 minutes to whip up this Baileys icing, especially if you are using a stand mixer. You can do this in a hand mixer too but it can take a bit longer because they are not as powerful.

All you need are a few simple ingredients. Powdered sugar, unsalted butter, Bailey’s Irish cream, and milk. If you are making the Guinness cake too, I also poured a tad of the syrup you make in that recipe into the frosting because you’ll have some leftover, and because the slight bitterness helps contrast with the super sweet frosting flavor.

You can leave it out if you’re making a different cake. The frosting would also be amazing on these chocolate fudge cupcakes too because this frosting pipes really well!

When I was in culinary school one of my favorite things to do was to make frostings in any flavor I could think of. This type of frosting is an American buttercream which just means that the base is powdered sugar and butter, and then you’ll add a flavor, and milk to loosen the frosting and make it easy to spread.

Lemme show you how to make it!

Make the frosting

You’ll need unsalted butter at room temperature first. Room temp butter is actually colder than you might think. It should make a slight indentation when you press it and still feel cold. It should not be greasy and your finger should not be able to push all the way down.

Throw the unsalted room temp butter into the bowl of a stand mixer and pour the powdered sugar on top. Mix on low- medium speed for 1-2 minutes until the mixture is combined well, like a paste.

Scrape down the bowl and with the mixer on low add in the Baileys, the milk, and the Guinness syrup (if making the cake too).

Mix on high speed for 30 seconds to fluff it up. Tada! You are done! If the frosting is too thick, then just thin it with a little more liquid- I would go for the milk. If its too thin, add a bit more powdered sugar and mix again till you get to the consistency you lile.

Amount of Baileys

I only used 2 tsp of Baileys in this recipe. I didnt have a big bottle at home, and I didnt want to buy it just for the recipe, so I bought one of those teeny tiny bottles. It’s more than enough for what you’ll need. Adding too much into the recipe can make it taste too boozy. I found that 2 tsp was the right amount for the flavor to come through.

If you dont have any at home, just buy one of those tiny bottles. It’s enough!

The alcohol flavor will not cook off for this frosting because there is no cooking involved. To each their own, I would give this to my kids but please make your own decisions.

Yield

This icing will make enough to fill and frost a 2 layer 9″ cake lightly or frost 12 cupcakes. If you want to have a thicker frosting layer, double the recipe. You will still only need that one teeny bottle. No need for a big one.

5 Minute Boozy Baileys Frosting

Ingredients

  • 1 cup (227 g) unsalted butter
  • 3 1/2 cups (420 g) powdered sugar
  • 2 tsp (2 tsp) Bailey's Irish Cream
  • 1 tbsp (1 tbsp) Milk
  • 1 tsp (1 tsp) Guinness syrup , from Guinness Cake Recipe (optional)

Instructions
 

  • In the bowl of a hand or stand mixer fitted with the paddle attachment add the 1 cup butter and 3 1/2 cups powdered sugar and mix on low-medium speed for 30 seconds-1 minute.
  • When the mixture looks like a paste (turn up the speed if its not coming together) then stop and scrape the mixture.
  • With the mixer running on low, add in 2 tsp Baileys, 1 tbsp milk, and 1 tsp of the Guinness syrup if using.
  • Mix on med-high speed to fluff it up, for 1 minute.

Notes

If the frosting is too thick, thin it out with a little milk. If its too thin, add 1/4 cup more powdered sugar and mix again until you get to the consistency you want.
